Cajun Inspired Maque Choux Recipe – Quick and Easy!


  • 12 oz smoked or andouille sausage, cut into ¼ inch wheels.  
  • 1 large onion, slivered
  • Several peppers, any type and color, chopped
  • 1 jalapeno
  • 4 cloves garlic, finely chopped
  • ½ pound  fresh beans, cleaned and cut in bite-sized pieces
  • 3-4 ears sweet corn, raw sliced off the cob.  
  • Fresh thyme  – 2 tsps.
  • bacon grease or olive oil
  • salt and pepper to taste


Sauté sausage wheels until browned. Remove from the pan. Leave the residual grease in the pan. Heat 1 T. of olive oil or bacon grease. Add the onion, peppers, jalapeno , garlic, thyme and beans. Sauté until the beans are crispy cooked. Add the raw corn and sausage and heat through. Salt and pepper to taste.
