Ingredients
- 12 oz smoked or andouille sausage, cut into ¼ inch wheels.
- 1 large onion, slivered
- Several peppers, any type and color, chopped
- 1 jalapeno
- 4 cloves garlic, finely chopped
- ½ pound fresh beans, cleaned and cut in bite-sized pieces
- 3-4 ears sweet corn, raw sliced off the cob.
- Fresh thyme – 2 tsps.
- bacon grease or olive oil
- salt and pepper to taste
Preparation
Sauté sausage wheels until browned. Remove from the pan. Leave the residual grease in the pan. Heat 1 T. of olive oil or bacon grease. Add the onion, peppers, jalapeno , garlic, thyme and beans. Sauté until the beans are crispy cooked. Add the raw corn and sausage and heat through. Salt and pepper to taste.
